Is there a way to erase multiple select colors from a picture at once?

I have a scanned document with writing on it which I want to get rid of. Unfortunately, the writing, though done in ink or graphite, was scanned with 15+ different shades of grey. Is there a program that I can just punch in all of the colors codes and it will go through the picture and erase all of them?
